Ingredients: 1 1/2 cups of pitted dates 1/2 cup crushed pecan nut 2 Tbls raw cocao 1-2 Tbls raw agave nectar 1 1/2 Tbls organic extra virgin coconut oil (COLD PRESSED)
Method: Blend the dates in a blender, processor or bar mix until smooth. Move dates into a mixing bowl and add remaining ingredients. Mix with clean hands until completely combine. Make sure the agave & coconut oil is evenly dispersed throughout the mixture. Lay out a square of baking paper and place mixture in the middle. Use the paper to roll the mixture into a log then tightly wrap and fold or twist ends to secure mixture. Leave to set in refrigerator for at least 1 hour. It will be hard to touch when ready. Once set, carefully remove from paper and cut into slices. Serve with strawberries or favorite fruit. Goes nicely with coconut yogurt as pictured below!
Makes 4-8 serves Store in fridge.
Raw Apricot Energy Slice
(these bars are great for calming inflammatory in the body & and your immune system)
Ingredients: 1 cup pitted dates 1/2 cup dried apricots 1/2 cup raw cashews 1 Tbsp chia seeds 2 Tbsp LSA mix 1/2 Tbsp coconut nectar 1 Tbsp coconut oil 1/2 teaspoon ground cinnamon Pinch of pink/celtic rock salt
Method: Combine all ingredients except coconut oil & coconut nectar, in a food processor or stick mixer (I use the stick mixer) and pulse until ingredients are finely ground and the dates are well incorporated. In a mixing bowl add coconut oil & coconut nectar to mixture and mix well with clean hands until you think the coconut nectar is evenly dispersed. Press the mixture into a paper lined 8 - 9" square cake pan and freeze for at least one hour.
When ready, cut into bars or squares & store in the freezer. If you want to keep in the fridge, experiment with a little less coconut oil.. but that's mainly for the warmer weather :)
Ingredients: 400ml rice milk (Frozen over night) 1 1/2 cups frozen strawberries 1/2 lime, zested and juice 1 -2 tsp agave
Method: Cut the frozen rice milk into rough cubes about an inch in size, using a bread knife. Mix all ingredients in a processor until smooth. Add sweeteners to taste if necessary..
Depending on consistency (and who you will be serving), you may like to return the mixture to the freezer before serving. Garnish with a sprig of mint and enjoy!

Method: In a large bowl, combine dry ingredients. Combine the egg replacer, banana, oil, honey & natvia then stir into dry ingredients until moistened. Fold in the seeds & nuts. Fill muffin liners two-thirds full with batter. Bake at 180 degrees for 13-16 minutes or until a toothpick comes out clean.
