2 cups sesame seeds 150 ml olive oil (add more if required) Juice of one lemon 150-250ml water 1 clove of garlic A few sprigs of parsley Pink Himalayan salt
Separate sesame seeds into two equal parts. Lightly toast half (1 cup) of the sesame seeds in a tray in the oven or under grill. Pay close attention as they can burn easily. You don’t want them to go brown, just slightly golden. It should only take a few minutes but requires your full attention in that time. Remove from oven and allow to cool. Add toasted seeds to the rest of the sesame seeds and put in a food processor or bar mix with olive oil. Mixture should be thick but of pourable texture Blend until smooth and creamy adding more oil if required. Add lemon juice, garlic & parsley and blend until combine. Gradually add water until you have reached your desired texture and consistency. Taste test and add pink salt to taste.
