Kale & Avo Raw Salad
Ingredients: 1 bunch of organic kale Juice of half a lemon 1-2 tablespoons cold pressed avocado oil (or rice bran, flax or grapeseed) Himalayan rock salt 1/2 avocado Handful of TGWC 'Seed Mix' Salad topper CLICK HERE FOR RECIPE 1/2 salad onion (finely diced) 1 Un toasted nori sheet
Method: Strip the kale leaves from the stalks. Roll kale into small balls and massage before cutting into thin strips. Mix in the lemon juice, oil and salt. Using your hands, scrunch the kale until it softens. Mash the avocado. Using your hands mix well through kale. Add the seed mix & finely diced salad onion. Cut the nori sheet into very fine strips. Mix in with a spoon.
Serving suggestion: Roll salad into a ball, cut left over nori sheet into a square and place ball on top. Drizzle some extra oil on top and sprinkle on some seed mix!
Keeps for at least 2 days in the refrigerator. Serves 2 - 4.
