Gluten free vegan banana pancakes
Ingredients: 2 Medium size bananas 1 1/2 Cups rice flour (or almond meal) 1 Heaped table spoon coconut palm sugar 1 Cup of almond milk 1 Tsp cinnamon 1/4 Tsp nutmeg (optional) 1/2 Tsp celtic or pink Himalayan salt 2 Tsp bicarb soda 1 Vanilla bean (slice and scrape out center) 1-2 Tablespoons of coconut oil (if you don't love coconut oil use rice bran oil)
Method: The method is simple. Put everything in a food processor, high power blender or bar mix and mix until combine and banana is smooth with no pieces. Allow to sit for 5 or so minutes. Pour mixture onto non stick hotplate/pan around 4 inches in diameter wait for the bubble and flip when edge is easy to lift (about 2-3 minutes each side).
Serve with fresh fruit, cashew cream (click here for recipe) and a drizzle of maple syrup. I like to add some sweet cacao nibs for a little extra flavour and crunch.
